April Prep

Yesterday’s food prep started out so promising.  But by afternoon I was fed up… fed up with things I had forgotten to get at the store, the kids constant fighting, everyone wanting me to drop what I was doing and make them food, oh the list could go on!  I finally threw on my running shoes and went for a 50 minute run to clear my head, and when I can back I felt a bit more motivated to finish my prep.

How could you not be happier after a jog with there two?  I wore them out good 🙂

From the top:  Paleo Banana Chip Bar, choco-flax bar, and Lemon Bar.  All are made with a date base.  LOVE, LOVE, LOVE making bars!!!

Today’s Prep has went MUCH better.  It is extremely nice out, so the kids have stayed out from under my feet.  All I have left to assemble is hamburgers and meatballs.  I was a goober and left the venison I needed to grind in the fridge – and you can’t grind defrosted meat so it is chilling in the freezer.

Man it is nice having this all (or close too) done!  I feel like I will be able to survive he next crazy month!!

The man of the house is working on his shop and then we are going to take the little men of the house fishing.   Since I am as done as I am going to get AND the house is clean… I think I am going to go for a run!!

April Menu Planning & Today’s Eats

The past 2 days I have been non-stop planning… Even in my sleep.  I hate when I do that.  Yesterday morning started out with full birthday party planning.  The twins’ 5th birthday is in 2 weeks and I haven’t even thought too much about a party, so I got the bug yesterday morning and put a full game plan together (theme, decor, menu, cupcakes, and game) in 2 hrs!  Pretty dang good if I say so.

Then it was on to April meal planning.  This one took most of the day. Blah!  This next month and a half is going to be pure survival.  With soccer taking up pretty much every evening, garden work, and a few days of work a week I wanted most of my menu to be quick.  Yesterday I got my recipes together, shopping list, and planned my prep. This morning I took stock of the kitchen and got my coupons loaded on my Safeway card.  Then with one little man in tow (don’t know how I swung that), we were off to do some major bank account depletion…

This wasn’t even all of it!  There were 5 bags on the floor.  Why do you always run out of everything at once?  I was out of 6 spices this morning. Unheard of. Grocery bill: $225.

Today’s eats:

Breakfast: cherries with kefir and a fried egg.

Lunch: Larabar & kevita (grabbed both   while shopping)

The kevita was better than I expected it to be.  I’m not a big fan of coconut water.  It seems like it is going to be full flavor and bam.. nothing!  But the kevita was pretty good.

Dinner:  BBQ pulled venison on paleo tortillas topped with homemade guacamole

Freaking delicious!  …I’m a little obsessed with my kefir ranch lately as well. 

I got a bit of prepping done when I got home today.  Fruit and veggies cleaned and bagged, broccoli blanched and put in the freezer, and chicken sperated (i buy it in bulk).  Tomorrow is the start of my 2 day cook off.  By Sunday evening a month of meals will be tucked happily in my freezer!!  Bring on Sunday.

Weigh in Wednesday & My First Virtual 5K

First off (and most excitedly) I ran my first virtual 5k tonight!!!!  I signed up for it about a month ago on Sparkspeople.com (Don’t have an account? GET ONE!!).  It started off rough… I really felt yesterdays imaginary hills from my cycling, and at many times considered stopping and trying it in a day or two. BUT, I trumped on and I’m so happy that I did!  My time was amazing @ 38.09, but I ran it at the track and there is no exhausting hills to compete with so I am sure that helped.  I am very proud of myself and I love seeing the progress I have made!!!

My Eats:

Breakfast:  Cherries with Coconut Kefir and a fried egg.

Cherries with Kefir is AMAZING!  Now that I have discovered this, I am sure I will use all my jars of canned cherries before there are cherry buds on the trees.

Lunch:  Leftover meatballs and brussels sprouts with cauliflower rice

Dinner:  I pulsed 2 deli slices of turkey pastrami with a bit of sauerkraut and put it in 2 romaine lettuce leafs and topped with spice       brown mustard.   It is a good combo with a unique texture that I was in the mood for.  I’m odd. At least I admit it.

Snacks:  drip coffee and a Chocolate chip Larabar (that totally rocked!)

A little while after dinner and of course when my kids were in bed I wanted some chocolate (who? me?)  so I whipped up a banana-almond smoothy with a tbs of cocoa powder.  My blender SUCKS! The smoothy was good…  My stupid blender is ridiculously loud and it has to blend for 23 minutes, gets hotter than crap, AND it still doesn’t get all the ice!!!!!  GRRR… people with Ninja Blenders don’t have that problem…. I needs to get me a Ninja!

Tuesday Sleep Deprived Rambles

I was up bright and early.. like 4 am early.  The man of the house was leaving at 5 am to go out of town for 3 days of work…. and no matter what he says, HE IS LOUD!  He had me up 5 minutes after he got up.  No respect I tell ya!

YUMMO!!!  I need to make some of these…. They are soooo delicious!

DSC_5080 My boss puts a jar out for me at work… okay, maybe she puts them out for the customers but between her and I, we know they are for me.  She finally replenished my the jar.  It’s going to be a happy week!

Tuesday Eats:

My phone is slowly pussing out on me, so I didn’t get pictures of lunch & first snack of almonds because it died.  I should really be a phone durability tester… the man of the house would agree. I go through them like CRAZY!

Breakfast:  Fried eggs with leftover spanish cauliflower rice.

My Workout:

I did a little cross-training today.  I got on my cycle, and used my same routine for running; 4 run 1 rest, but instead of resting for the minute I got out of the saddle and took and imaginary hill.IMAG2094

I was sad because I really wanted to be outside running, not stuck inside taking imaginary hills… okay, those imaginary hills kick some major arse!!   With warm up and cool down, it was a 45 minute imaginary round trip with 7 big hills!

The good part about working out indoors is Pandora.  Today I chose Marilyn Manson Radio.  The first song that came on was “The Beautiful People”  which Sully sings “The Buttery Meatball” (<– he really thinks that is what it says!)   And oddly that is what we had for dinner tonight!   I’m not a big Korn fan, but this one got me moving and grooving fo sho! Screenshot_2014-03-25-17-09-39

Oh I was so scared….

Found this is the bottom of my purse while shuffling crap from one ugly purse to the next.  I need a new purse.  I have purse envy of others.  I’am actually surprised it survived a week and a half in the bottom of my purse without being devoured early on… especially with chocolate in the title.  I tried a bite and the little men of the house divided and concurred the rest.  

 

Yesterday Eats:

Breakfast:  Spaghetti squash egg scramble and cherries

Lunch:  Spaghetti squash spaghetti, romaine lettuce, and cauliflower with coconut kefir ranch

Dinner:  Venison taco cups with Spanish “rice” <—- Cauliflower rice

I kind of threw the spanish cauliflower rice together.  I was worried it might get too moist with the tomatoes, but throwing it under Broil for 12 minutes really helped evaporate a lot of the moisture, leaving a nice fluffy rice.  Sometimes I surprise myself!  

Snack: Cherry-coco bar w/ a much needed cup of joe

Yesterdays Workout:

Okay, so yesterday was suppose to be my rest day, but I had to go to a soccer coach meeting at the school (eek! I’m coaching soccer! eek! I’m coaching my own kids!)  On my way there I decided if it wasn’t too late I would hit the track and do a quick mile run (not informing the man of the house of my plans).  We got done a little after 7 and it was daylight enough so I decided to go ahead with my plan.  Then of course on my way to the track my phone died so I threw it on the charger and jumped out for my quick run.   Now as I was running my mind began wondering and the sun began fading… it then dawned on my that if anyone attacked me, I broke my ankle, had a heart attack… I DIDN’T HAVE A PHONE!

I kept running and finished my mile (looking behind me because I was more worried about an attacker than a broken ankle), had a minor panic attack when I got back to my truck and thought I locked the keys inside (along with my phone) and breathed a sign of relief when I was safely inside with the doors locked… it was an exhausting mile to say the least. Maybe I shouldn’t randomly decided to do workouts on my rest days…

We seem to have a touch of a stomach bug hitting our house.  Thank god it isn’t one that last long, but really nothing I wanted to have this week.  Yesterday not only came with the flu, but news that my grandpa in WV had passed away… we knew it was coming, and he is no longer in pain, and for that I am grateful!

Yesterday Eats:

Breakfast:  Paleo Oatmeal turned pancake with almond butter

I threw it in the pan to make some Paleo oatmeal and it turned into a pancake… a delicious mistake!



Lunch : Leftover elk steak and pesto on spaghetti squash with baby carrots

I also made some cherry-chocolate paleo bars for my little rockstars for lunch this week.. guess I was in a mood for a cherry- chocolate combo yesterday!  I also made grain free Chocolate Banana Muffins… but sadly the men in the house devoured them straight out of the oven.  Growing men they are.  IMAG2083

 

Yesterday Workout:

My plan was to do some strengthening at home so when Blaze woke up sick, it set that in stone.  Once he finally fell asleep I got busy!

 

IMAG2077I Decided to do a WOD that I haven’t done since last fall:

12 Minute AMRAP (as many rounds as possible)

10 – lunges with 25# plate (obviously I only used 10 – what a pussy I am!)

15 – air squats

20 – speed skaters

10 – tuck jumps

In 12 minutes I did 4.5 rounds, and holy crap and I feeling it in my legs today!!!!  Of course I couldn’t find what my records from last fall to see how many rounds I could do, but I have an inkling that they haven’t improved 🙂  I’m going to add a weekly WOD to my workout from now on.
