Meal Planning Before Breakfast

Meal Planning is such a necessity in our house.  With 3 growing boys – 4 if you count the man of the house.  And I do.  It seems like food disappears faster than I can chop, prep, and store it.  Meal Planning also helps us keep our food budget in check – or what I call our food budget.  It is really nothing more than a number in my head that I attempt to ball park around when I plan a shopping trip.  The past 2 weeks maybe even 3 have not been well planned.  I can tell this by two things.  1. Looking at our banking I see frequent stops to the grocery stores with small purchases.  2. Too many nights of my husband asking what is for dinner and my response being: “I dunno! What do you want?” – which in turn results in a trip to a store for a small purchase.   UH!  Vicious cycle and I need to get us out of it ASAP.

I have been working on a complete June meal plan, but I still need to get through this next week….

Meal Plan for the rest of this week:

Wednesday: Thai chicken stuffed yams – via  ( My husband love this)

Thursday:  Tacos

Friday:  Southwest meatballs with creamy cilantro dipping sauce – via

Saturday:  Bacon japalpeno hamburgers w/ yam fries

Sunday:  Chicken-bacon broccoli salad

Man oh Man, does that take a load off my mind just having a plan of action!  I better get showered and off to the store.  Guess my weeds will have have to wait until this afternoon to die!  Oh what is a few more hours…

This mornings breakfast:


Yam hash with West Virginia Chili and a egg.  I will post the recipe for West Virginia Chili this week because everyone should try it!

Tuesday:  Chicken Enchilada Soup

Wednesday:  Hamburgers with Yam fries

Thursday:  Venison Roast with Veggies & Salad

Friday:  Pizza Night!

Saturday:  Philly Cheese Steak

Sunday:  Chicken in Spicy Mango Sauce with Yams & Salad

I love planing a monthly meal plan and then picking and choosing what to make each week as it seems fit.  Tuesday is going to be a busy busy day, so pulling the already made soup from the freezer is going to be perfect!

Less Stress = Happy MOM!

School Packed Lunch Organization


Last  year was my first year of packing school lunches.  I bought each of the kids lunch boxes and awesome accessories and would pack them – regardless if the twins were going to preschool or not.  By the end of the school year I was seriously sick of making sandwiches… although the kids never complained, to me I was sick of them and I wasn’t even the one eating them!  I decided this year I going to be super organized, starting with buying more lunch box arsenal.




What I have:

Lunch Box:  Thirty One Bags.  Personalized so NO one will steal it!

Reduce Bottles:  My kiddos are lactose intolerant so I bought them last year to make chocolate milk at home and send with them… I ❤ them!  I am buying more because                                       some of them are nasty on the inside but they are worth every penny.

Itzy Ritzy Reusable Baggies:  If you don’t own them- buy them!  I have a bunch of different brands but Itzy Ritzy is where it is at!

Small Container:  Recently bought at the Dollar store so the clasps will break in no time…

What I Plan on buying:

Thermos to add hot goodies to the mix

Reusable silverware – it’s all about saving the enviroment right!?

Ice Packs.  I didn’t use them last year, but Zion complained that his yogurt was soupy and if I froze it, it wasn’t defrosted by his 10:30 lunch.


Getting my menu organization on….


I am making 3 months of menus and then I can rotate them the rest of the year.  The grocery list will be simple to add to my main shopping list.  I will probably 3 ring binder it and have recipes to go along with the menu so it is on hand.  #organizationdork

A few of the recipes I have I can freeze the extra for the next rotation.  Also I can make a few as dinners and use the next day as leftovers for lunch!  I’m so ridiculously excited about this!

My favorite recipe I have come across so far is Pizza Muffins – isn’t that inventive and fun!?!?
